Say: Pancakes! Think: Maple Syrup.

I knew I found a best friend when he said to me, "let's have pancakes for dinner tonight." And then, we did.

Of course, we were in Las Vegas working on a project when he said that, and in Las Vegas...most anything seems to make sense—even breakfast at midnight. That doesn't change the fact that pancakes with maple syrup brings a smile to most people—Even when you are in the worst mood ever. And there are all sorts of pancakes to choose from too. Sometimes I like a stack of pancakes that cover the middle of the plate...other times I prefer mini-pancakes, they are so cute.  There are fluffy pancakes, fancy pancakes, basic pancakes, blueberry pancakes—none of them wrong—all of them delicious.

I found a pancake mix that I like called Bo's Best—almost as good as the pancakes my dad made when we were growing up. 

Pancake mix and maple syrup

They are so easy to make.  Here's what you need:

1 Package of Bo's Pancake Mix (I like Vanilla)

1 1/2 cups water

2 eggs

1/4 cup vegetable oil

Stir everything together.  Next, add the batter on large (or small) dollops to a non-stick pan, and turn once when the bubble appear.  That's it!  Then cover (in my case, smother) with maple syrup and simply enjoy.

As I said, there are many ways to make a pancake, many splendid times of the day to eat them, but only one thing to do when you indulge...and that is to smile!  One thing is for sure, life is short...eat more pancakes along the way.
